Shorty's Biscuits


I have a passion for experimenting with recipes, this recipe was sort of stumbled upon when i accidentally put to much baking soda in(or so i thought).  Introducing, very fluffy biscuits that are flaky and delicious. What make these so awesome is that there is no yeast, baking powder(which can contain aluminum), or wheat flour. You can use them for everything from English muffins to mini pizza crusts, hope you enjoy!






3 C rice flour blend (Namaste Foods Perfect Flour Blend Gluten Free )
1 1/2 teaspoons baking soda
1 1/2 teaspoons sea salt
2/3 C palm fruit shortening, firm butter or firm lard
2 eggs
1 C yogurt
2/3 C water

Mix together the rice flour, baking soda, and sea salt 
Cut in the shortening, butter or lard how to cut butter
Mix the eggs, yogurt, and water together, then add to dry ingredients
Mix until it forms a dough-like consistency
Place on a cutting board and roll out to about 1/2" thick
Cut into circles and place on baking sheet(i use a biscuit cutter or cup)
Bake at 350 degrees for 30 min.
